Salsa, guacamole, disease?

According to the (US) Centers for Disease Control and Prevention today, just under 1 in 25 restaurant-associated foodborne outbreaks with identified food sources between 1998 and 2008 can be traced back to contaminated salsa or guacamole. This doubled from the ten years before.

The number of similar outbreaks reported in the ten years leading up to 1984 was – – – zero.

Before you worry too much, the total number of outbreaks was tiny. Just a few hundred per year. But how do you mess up something as simple as salsa or guacamole?

Wrong temperature 30%. Food workers (???) 20%. Remainder ???
